The sun is shining and I can finally contemplate putting the slow cooker away. I’ve started training for my Olympic triathlon too, which coincides with trying to shift some of my flabby bits. If you need to get some more protein in your diet, which I’m struggling to do at the moment, I don’t think chicken would be out of place in this.
Half an avocado
2 – 3 strawberries
Handful of shredded lettuce
25g feta cheese
Small handful of halved pecans
Simply mix together and drizzle over the top of your salad:
tbs lime juice
A few people commented on my Instagram photo, not sounding too sure about strawberries in a salad. I promise they’re amazing. This salad is on the sweet side, but the feta balances out the sweetness perfectly. Enjoy!
